Frozen Blackberry Mousse

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 3 cups fresh blackberries
  • 1 pint whipping cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla

Recipe

  • 1 line 12 serving muffin pan with foil baking tins. place blackberries in a bowl and crush slightly. set aside.
  • 2 in a large mixing bowl combine whipping cream, sugar, and vanilla. beat with an electric mixer on medium high speed until soft peaks form.
  • 3 fold in crushed berries and spoon into lined muffin cups.
  • 4 freeze until firm. to serve remove baking tins and place on desert plates. can be garnished with fresh berries and shaved chocolate to dress it up!
