Crystallized Ginger - Yoghurt Pound Cake

Total Time: 1 hr 35 mins Preparation Time: 20 mins Cook Time: 1 hr 15 mins

Ingredients

  • 1 cup butter, at room temperature
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 4 eggs, at room temperature
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups greek yogurt (sour cream can be used instead)
  • 3/4 cup crystallized ginger, cut in tiny pieces

Recipe

  • 1 preheat oven to 300f (a low temperature, but it works); butter and flour a bundt pan (mine is no-stick but i still butter and flour it).
  • 2 with mixer beat butter for a couple of minutes until ; add sugar and extracts and beat a few minutes longer (about 8-9 minutes in all); add eggs, one at a time, beating after each addition; with mixer on low (to avoid getting flour dust all over the kitchen) add flour, baking powder and salt alternately with yoghurt; beat in ginger; this makes a very thick batter; spoon into prepared bundt pan and bake for 75 minutes (but start checking with toothpick to see if it's done after an hour (temperatures vary from oven to oven).
  • 3 variations: i often use the 'base' recipe (omitting the ginger) and 'marble some of the batter with cocoa (add a tablespoonful or so of milk and 2 heaping tablespoonfuls of cocoa to 1/3 of the batter); or make a nut cake by stirring in 1 1/2 cups of the flour-dusted, toasted nuts of your choice (a sprinkle of freshly-grated nutmeg is great in this version); our current favourite is chocolate, chocolate/chip where i add 3 tablespoonfuls of cocoa to the batter (along with a couple of tablespoonfuls of milk - or buttermilk if you have it) and then stir in 1 1/2 cups of flour-dusted chocolate chips at the end, before spooning into pan.

  • 200 g ricotta cheese or 200 g polish soft cheese
  • 15 g butter, melted
  • 2 large eggs, lightly beaten
  • 50 g caster sugar
  • 300 g plain flour, plus extra for dusting
  • 100 g fine semolina
  • 5 tablespoons 1% low-fat milk
  • 500 g mixed fruit (apricots or plums, halved and stones removed or whole blueberries)
  • 300 g dark chocolate, broken into squares (if using apricots)
  • 12 lumps of sugar (if using plums)
  • 1 dash sugar (if using blueberries)
  • 40 g unsalted butter
  • 100 g fresh breadcrumbs
  • 2 tablespoons granulated sugar
  • 20 g unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons caster sugar

Recipe

  • 1 for the dough: push the cheese through a sieve into a mixing bowl. add the butter, eggs and sugar and mix together well. add the flour, semolina and milk in stages to form a soft, pliable dough. tip it out of the bowl on to a lightly floured surface and knead it lightly. roll into a long sausage shape about 6cm in diameter.
  • 2 for the filling: if you're using apricots, put a square of chocolate in the centre of each fruit to replace the stone and close the halves firmly together. if you have chosen plums, replace the stone with a lump of sugar and close the halves firmly together.
  • 3 cut a slice of dough about 1 cm thick and put it on a well-floured board. roll it out into a circle large enough to envelope the apricot or other fruit. put an apricot or plum on the dough and bring it up around the fruit to enclose it completely. seal the edges well and repeat with the remaining dough and fillings. if you are using blueberries, use 3-4 per dumpling with a sprinkling of sugar.
  • 4 bring a large pan of slightly salted water to the boil and drop the dumplings into it, 3 or 4 at a time. gently move them around the pan with a wooden spoon to ensure they don't stick to the bottom and cook them for 10-12 minutes; they are done when they rise to the surface.
  • 5 for the crumble: melt the butter in a frying pan over a medium heat. add the breadcrumbs and fry gently until golden, then sprinkle in the sugar and stir well. remove the pan from the heat and tip the crumble mixture into a warmed serving dish.
  • 6 remove the dumplings as they cook, using a slotted spoon to let them drain. roll them in the crumble mixture, and keep them warm in a low oven while you cook the remaining dumplings. once they are all cooked and coated, serve them hot with the melted butter spooned over, and sprinkled with cinnamon and sugar.

Fruit Dip

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 12
  • 1 (8 ounce) package cream cheese, softened
  • 1 (7 ounce) jar marshmallow creme

Recipe

  • 1 1. using an electric mixer, blend cream cheese and marshmallow creme until mixed thoroughly.
  • 2 my note: i make this for just about any gathering at my house, because it always gets eaten. i have been making this dip for a couple of years with the following adjustments: use light strawberry cream cheese. i add 2 tbs of orange juice when mixing with the marshmallow ceam. finally, i fold in 1 cup of cool whip. i never have any left overs with this dip!
  • 3 just remember to let your cream cheese soften before you mix. it is a lot easier this way. also i stick my rubber scraper in very hot water to help to get the sticky marshmallow cream out of the jar.
  • 4 used strawberry cream cheese, added 1 cup of cool whip and 2 tbsp orange juice. had people at the party eating dip without the fruit. if you add cool whip make sure the cream cheese and marshmallow creme are mixed well first. serve with a fruit and bite size cubes of pound cake! as well!
  • 5 we have add 1/4 t sugar and 1/2 vanilla extract. we also add a few drops of red food coloring to give it a pink hue. this makes it so pretty next to strawberries, watermelon, cantaloupe and fresh pineapple chunks. or add a few drops of marachino (sp)cherry juice to make it have a pink tint. its great with strawberries.
  • 6 i love this recipe. i usually add about 1-2t lemon juice. it makes it smoother, and it gives it just a little bit of a kick. either way, this is a great dip for any kind of fruit -- melons, berries, grapes, bananas, you name it!
  • 7 i get requests for it all the time! my son loves it and he have served it at several get-togethers. sometimes he add a bit of orange juice and always use light strawberry cream cheese.
  • 8 i have used this recipe for a number of years now but i have varied it several times. you can use any kind of the sweet flavored cream cheeses or make it with the marshmallow cream and 8 oz cream cheese and add 3 tablespoons of cocoa powder to it to make the best chocolate fruit dip ever! p.s. you can also use this as an icing on cake if you like!
  • 9 i tried this recipe different ways over the years: as written and once with strawberry cream cheese, orange juice and whipped cream. the original recipe was so much better! my family didn't like the modifications at all, but the original recipe was gone that evening. i definitely recommend making it the way it is originally written!
