Elana's Paleo Banana Bread

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • 3 bananas, mashed (approx. 1 1/2 cups)
  • 3 eggs
  • 1 tablespoon vanilla
  • 1 tablespoon honey
  • 1/4 cup vegan palm oil shortening
  • 2 cups blanched almond flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips (optional)

Recipe

  • 1 pulse bananas, eggs, vanilla, honey and shortening in a food processor.
  • 2 pulse in almond flour, salt and baking soda.
  • 3 if desired, pulse chocolate chips into batter.
  • 4 scoop batter into a greased 7.5 x 3.5 inch loaf pan.
  • 5 bake at 350 degrees for 55-60 minutes.
  • 6 remove from oven and allow to cool.
