Double Chocolate Banana Cookies

Ingredients
- 3 -4 medium extra-ripe bananas
- 2 cups rolled oats
- 2 cups sugar
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups margarine, melted
- 2 eggs, lightly beaten
- 2 cups semi-sweet chocolate chips
- 1 cup chopped natural almonds, toasted
Recipe
- 1 purée bananas in blender; need 2 cups for recipe.
- 2 combine oats, sugar, flour, cocoa, baking soda and salt until well mixed.
- 3 stir in bananas, margarine and eggs until blended.
- 4 stir in chocolate chips and almonds.
- 5 refrigerate batter 1 hour or until mixture becomes partially firm (batter runs during baking if too soft).
- 6 preheat oven to 350°f.
- 7 measure 1/4-cup batter for each cookie.
- 8 drop onto greased cookie sheet.
- 9 flatten slightly with spatula.
- 10 bake 15 to 17 minutes until cookies are golden brown.
- 11 remove to wire rack to cool.
