Double Chocolate Banana Cookies

Total Time: 1 hr 32 mins Preparation Time: 1 hr 15 mins Cook Time: 17 mins

Ingredients

  • 3 -4 medium extra-ripe bananas
  • 2 cups rolled oats
  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups margarine, melted
  • 2 eggs, lightly beaten
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped natural almonds, toasted

Recipe

  • 1 purée bananas in blender; need 2 cups for recipe.
  • 2 combine oats, sugar, flour, cocoa, baking soda and salt until well mixed.
  • 3 stir in bananas, margarine and eggs until blended.
  • 4 stir in chocolate chips and almonds.
  • 5 refrigerate batter 1 hour or until mixture becomes partially firm (batter runs during baking if too soft).
  • 6 preheat oven to 350°f.
  • 7 measure 1/4-cup batter for each cookie.
  • 8 drop onto greased cookie sheet.
  • 9 flatten slightly with spatula.
  • 10 bake 15 to 17 minutes until cookies are golden brown.
  • 11 remove to wire rack to cool.
