Double Choco-chia Banana Muffins

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • 2 eggs
  • 4 bananas, blended until smooth
  • 1 cup greek yogurt
  • 1 tablespoon chia seeds
  • 9 tablespoons water
  • 2 cups brown sugar
  • 1 1/2 cups cake flour
  • 1 cup whole wheat flour
  • 1/2 cup cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips

Recipe

  • 1 i know this sounds crazy but here's how i do it and they turn out every time.
  • 2 mix all wet ingredients in one bowl.
  • 3 mix all dry ingredients in another bowl, including sugar and chocolate chips.
  • 4 add dry into wet (important: this will help it mix much more evenly).
  • 5 fold in just until incorporated.
  • 6 spoon into mini loaf pans.
  • 7 bake at 350f for 18 minutes.
  • 8 enjoy!
