Ginger Truffles

Ingredients

  • 1/2 cup butter
  • 1/2 cup double cream
  • 1 teaspoon ginger
  • 1 cup chocolate
  • 2 tablespoons chocolate
  • 2 tablespoons glace ginger, chopped finely
  • 1 medium egg yolk
  • 1 tablespoon drambuie
  • cocoa powder, sieved
  • crystallized ginger

Recipe

  • 1 combine butter, cream and ground ginger in a saucepan. cook over low heat unil butter melts and cream bubbles around edges. remove from heat,.
  • 2 chop chocolate and add to mixture. cover with a lid until melted. stir until smooth,.
  • 3 mix glacé ginger, egg yolk and drambuie. chill until firm. form into balls and roll into cocoa powder to cover. top with ginger.
