Chocolate Fiber Muffins

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 24
  • 1 cup buckwheat flour
  • 1 1/2 cups ground flax seeds
  • 4 cups water
  • 1 1/2 cups gluten-free flour (gluten-free flour blend)
  • 1 cup cocoa
  • 3/4 cup sugar
  • 3/4 cup splenda sugar substitute
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons guar gum or 1 1/2 teaspoons xanthan gum
  • 2 teaspoons pure vanilla extract
  • 5 tablespoons cooking oil
  • 1 tablespoon vinegar
  • 2 eggs

Recipe

  • 1 mix buckwheat flour, flax, and water. let stand.
  • 2 preheat oven to 350°f line two muffin trays with paper baking cups. spray with oil or pam.
  • 3 in a separate bowl, mix all dry ingredients.
  • 4 add vanilla, oil, vinegar, and eggs to buckwheat mixture. blend well.
  • 5 add liquids to dry ingredients and mix well.
  • 6 fill cups about 2/3 full.
  • 7 bake for 20 - 30 minutes, or until toothpick inserted comes out clean.
