Fat Free Chocolate Meringue Cookies

Ingredients
- 2 tablespoons cocoa powder
- 1/2 cup sugar
- 2 large egg whites (or 1 cup egg product)
- 1/4 teaspoon cream of tartar
- 1 pinch salt
- 1/2 teaspoon peppermint extract
Recipe
- 1 preheat oven to 250 degrees.
- 2 line two baking sheets with parchment paper.
- 3 in a small bowl, sift together the cocoa powder and sugar.
- 4 in a large bowl, beat egg whites cream of tartar and salt with an electric mixer until soft peaks form.
- 5 add the cocoa mixture one at a time, mixing between addittions.
- 6 add pepperment extract and mix well.
- 7 drop by rounde tablespoonsonto baking sheets.
- 8 place in oven for one hour.
- 9 turn off oven and leave door slightly open.
- 10 leave cookies for at least 2 hours or overnight.
- 11 store in airtight container.
