Gooey Chocolate Caramel Fantasy

Ingredients

  • Servings: 12
  • 2 cups chocolate wafer crumbs (about 38 wafers)
  • 1/3 cup butter, melted
  • 30 vanilla caramels
  • 1/2 cup caramel ice cream topping
  • 1/4 cup whipping cream
  • 2 cups chopped pecans
  • 3/4 cup semisweet chocolate piece
  • 1/4 cup whipping cream

Recipe

  • 1 in a medium mixing bowl, stir together the chocolate wafer crumbs and melted butter.
  • 2 press onto the bottom of a nine inch springform pan.
  • 3 bake in a 350 degree oven for 10 minutes.
  • 4 cool slightly on a wire rack.
  • 5 in a heavy medium saucepan, melt caramels in caramel ice cream topping over low heat,stirring often.
  • 6 stir in the first 1/4 cup whipping cream.
  • 7 remove from heat; stir in nuts.
  • 8 spread over crust.
  • 9 cool;cover and chill for one hour.
  • 10 for the topping:.
  • 11 in a heavy saucepan, melt chocolate.
  • 12 remove from heat;stir in remaining whipped cream.
  • 13 drizzle or spread over caramel pecan mixture.
  • 14 cover and chill for at least one hour.
