Glacier Squares

Ingredients

  • Servings: 12
  • 8 cups mint-chocolate chip ice cream
  • 30 chocolate wafer sandwich cookies
  • 3 tablespoons butter or 3 tablespoons margarine, melted
  • 1/2 cup magic shell ice cream topping

Recipe

  • 1 soften the ice cream in the refrigerator for 30 minutes.
  • 2 meanwhile, pulse the cookies in a food processor until crushed. (or crush the cookies in a re-sealable plastic bag with a rolling pin).
  • 3 toss the crumbs with the butter. press into a 9x13-inch pan.
  • 4 .
  • 5 freeze for 15 minutes. drop spoonfuls of ice cream over the crumb base. using the back of a spoon, spread ice cream evenly over the crust.
  • 6 freeze for at least 5 hours or until firm. cover tightly and store in the freezer for up to 5 days. thaw for 10 minutes at room temperature before slicing.
  • 7 drizzle the chocolate magic shell decoratively over each ice cream slice to garnish.
