Chocolate Mint Muffins

Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 1/4 cup butter, melted
- 28 creme de menthe thin candies, chopped or 1 cup chopped chocolate-covered mint candies
Recipe
- 1 sift flour, sugar, cocoa powder, baking powder and salt into medium bowl; stir to mix.
- 2 in another bowl, combine egg, milk and butter, beat to mix well.
- 3 pour egg mixture into flour mixture; mix until moistened.
- 4 be careful not to overmix.
- 5 gently fold in candies.
- 6 lightly grease 12 muffin cups or line with cupcake liners.
- 7 place about 1/4 cup batter into each cup.
- 8 bake in a pre-heated 375°f oven for 15-18 minutes, or until top of muffins are slightly firm.
- 9 remember toothpick won't necessarily work because of the melted chocolate.
- 10 cool in pan for 5 minutes.
- 11 place on wire rack to cool completely.
