Chocolate Mint Muffins

Total Time: 38 mins Preparation Time: 20 mins Cook Time: 18 mins

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 28 creme de menthe thin candies, chopped or 1 cup chopped chocolate-covered mint candies

Recipe

  • 1 sift flour, sugar, cocoa powder, baking powder and salt into medium bowl; stir to mix.
  • 2 in another bowl, combine egg, milk and butter, beat to mix well.
  • 3 pour egg mixture into flour mixture; mix until moistened.
  • 4 be careful not to overmix.
  • 5 gently fold in candies.
  • 6 lightly grease 12 muffin cups or line with cupcake liners.
  • 7 place about 1/4 cup batter into each cup.
  • 8 bake in a pre-heated 375°f oven for 15-18 minutes, or until top of muffins are slightly firm.
  • 9 remember toothpick won't necessarily work because of the melted chocolate.
  • 10 cool in pan for 5 minutes.
  • 11 place on wire rack to cool completely.
