Gooey Chocolate Cashew Bars

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup butter, softened
  • 1/4 cup light brown sugar or 1/4 cup dark brown sugar, packed
  • 3/4 cup granulated sugar
  • 3/4 cup dark corn syrup
  • 3 large eggs, slightly beaten
  • 3 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 1 1/2 cups salted cashews, coarsely chopped
  • 1 1/2 cups semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 350°f.
  • 2 base: combine the flour, butter, and brown sugar in a small bowl, using an electric mixer on low speed, until the mixture is crumbly.
  • 3 press mixture firmly onto the bottom of an ungreased 13x9" baking pan; bake for 15 minutes, or until lightly golden.
  • 4 meanwhile, make the filling: in a large bowl, stir together the sugar, corn syrup, eggs, melted butter, and vanilla until well blended.
  • 5 stir in the cashews and chocolate chips.
  • 6 pour the filling over the hot, partially baked crust; continue baking for 28-33 minutes, or until set.
  • 7 cool completely before cutting into bars.
  • 8 store covered in the refrigerator.
