Gluten Free Chocolate Mint Chip Cookies

Ingredients
- 1 cup gluten-free flour (featherlite blend)
- 1 1/4 cups gluten-free flour (gf blend)
- 2 1/4 teaspoons xanthan gum
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 cup cocoa powder
- 1/2 cup butter (softened)
- 1/2 cup crisco
- 3/4 cup brown sugar
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 (10 ounce) package andes creme de menthe mint chips
Recipe
- 1 preheat oven to 350.
- 2 mix all dry ingredients.
- 3 in a large bowl cream butter, crisco, brown sugar & sugar.
- 4 add eggs and vanilla. mix in dry ingredients. after thoroughly mixed add mint chips.
- 5 bake 8-10 minutes. do not overbake.
- 6 these cookies freeze very well.
