Gluten Free Chocolate Mint Chip Cookies

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • 1 cup gluten-free flour (featherlite blend)
  • 1 1/4 cups gluten-free flour (gf blend)
  • 2 1/4 teaspoons xanthan gum
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/2 cup butter (softened)
  • 1/2 cup crisco
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 (10 ounce) package andes creme de menthe mint chips

Recipe

  • 1 preheat oven to 350.
  • 2 mix all dry ingredients.
  • 3 in a large bowl cream butter, crisco, brown sugar & sugar.
  • 4 add eggs and vanilla. mix in dry ingredients. after thoroughly mixed add mint chips.
  • 5 bake 8-10 minutes. do not overbake.
  • 6 these cookies freeze very well.
