Fudgy Chocolate-oatmeal Bars

Ingredients

- 1 cup butter
- 2 cups of packed brown sugar
- 2 eggs
- 4 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 3 cups quick-cooking rolled oats
- 1 (14 ounce) can sweetened condensed milk
- 2 cups semi-sweet chocolate chips
- 1 cup sliced almonds
Recipe
- 1 heat oven to 350°f.
- 2 set aside 2 tbsp of butter.
- 3 beat remaining butter in large bowl on medium speed of mixer for 30 seconds.
- 4 add brown sugar and beat until combined.
- 5 beat in eggs and 2 teaspoons of the vanilla.
- 6 stir together flour and baking soda in another large bowl.
- 7 stir in oats.
- 8 gradually stir flour mixture into beaten mixture, set aside.
- 9 combine remaining 2 tbsp of butter, sweetened condensed milk and chocolate chips in medium saucepan.
- 10 cook over low heat until chocolate melts, stirring occasionally.
- 11 remove from heat.
- 12 stir in 3/4 cup of almonds and remaining vanilla.
- 13 press 3 1/3 cups of oats mixture into bottom of an ungreased 15 1/2x10 1/2x1-inch jelly-roll pan.
- 14 spread chocolate mixture over the oats mixture.
- 15 using your fingers dot remaining oats mixture over the chocolate.
- 16 sprinkle the remaining almonds.
- 17 bake about 25 minutes or until top is lightly browned (chocolate mixture will still look moist)
- 18 cool in pan on a wire rack.
- 19 cut into 2x1-inch bars.
