Ingredients

- 4 ounces gum arabic
- 1 cup water
- 1 cup sugar
- 1 teaspoon almond extract
- 3 egg whites
- melted chocolate-flavored candy coating
- confectioners' sugar
- cornstarch
Recipe
- 1 soak the gum arabic in water overnight.
- 2 next,strain into a double boiler.
- 3 add the sugar,cooking until mix thickens.
- 4 remove from heat,adding in the extract,& stiffly beaten egg whites.
- 5 beat until mix is stiff.
- 6 dust a pan with equal amounts of cornstarch& confectioners sugar.
- 7 pour mixture into pan,dust top with cornstarch mixture.
- 8 let this stand overnight,then cut into pieces.
- 9 dip each in chocolate.
