Choc Banana Bread

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • 250 g flour
  • 2 teaspoons baking powder
  • 125 g unsalted butter, softened
  • 250 g caster sugar
  • 4 bananas, ripe, mashed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 175 g chocolate chips (dark or milk, good quality is a must!)

Recipe

  • 1 preheat the oven to 180c/350f/gas4.
  • 2 sift flour and baking powder into a bowl.
  • 3 in a separate bowl combine the butter, sugar, eggs and vanilla.
  • 4 stir in the chocolate chips.
  • 5 gently combine the wet and dry ingredients - careful not to overmix (or the end result will be a tough and dry loaf).
  • 6 pour batter into a nonstick or lightly greased 19x11cm (7 1/2 x 4 1/2 inch) loaf pan.
  • 7 bake 1 hour and 15 minutes or until skewer inserted comes out clean.
  • 8 remove from oven. leave to cool in tin for 5 minutes before turning out on a wire rack to cool.
  • 9 serve in thick slices with creamy butter!
