Chocolate Mousse Cake

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 300 g chocolate
  • 185 g butter
  • 1 cup sugar
  • 10 eggs, separated
  • 300 ml whipped cream

Recipe

  • 1 melt chocolate and butter in a bowl for 1 1/2- 2 minutes on high.
  • 2 preheat oven to 180degc.
  • 3 beat 1/2 cup sugar and egg yolks together until thick and creamy.
  • 4 stir in melted chocolate and butter.
  • 5 beat egg whites until stiff peaks form.
  • 6 gradually add remaining sugar and beat until thick and glossy.
  • 7 fold egg whites gently into chocolate mixture.
  • 8 pour three quarters mixture into a lined and greased springform pan.
  • 9 bake on low rack for 35- 40 minutes on convection 180c.
  • 10 allow to cool slightly.
  • 11 pour remaining mousse over cake.
  • 12 refrigerate overnight.
  • 13 decorate with whipped cream and chocolate squares round the edges.
