Chocolate Mousse Cake

Ingredients
- Servings: 10
- 300 g chocolate
- 185 g butter
- 1 cup sugar
- 10 eggs, separated
- 300 ml whipped cream
Recipe
- 1 melt chocolate and butter in a bowl for 1 1/2- 2 minutes on high.
- 2 preheat oven to 180degc.
- 3 beat 1/2 cup sugar and egg yolks together until thick and creamy.
- 4 stir in melted chocolate and butter.
- 5 beat egg whites until stiff peaks form.
- 6 gradually add remaining sugar and beat until thick and glossy.
- 7 fold egg whites gently into chocolate mixture.
- 8 pour three quarters mixture into a lined and greased springform pan.
- 9 bake on low rack for 35- 40 minutes on convection 180c.
- 10 allow to cool slightly.
- 11 pour remaining mousse over cake.
- 12 refrigerate overnight.
- 13 decorate with whipped cream and chocolate squares round the edges.
