Giant Toffee Pecan Cookies

Ingredients

  • Servings: 20
  • 1 cup butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 3/4 cup pecans, chopped
  • 2/3 cup english toffee bits

Recipe

  • 1 heat oven to 350°f combine butter, brown sugar and sugar in large mixer bowl. beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). add eggs and vanilla; continue beating until well mixed (1 to 2 minutes). reduce speed to low; add flour, baking powder and salt. beat until well mixed (1 to 2 minutes). stir in chocolate chips, pecans and toffee bits by hand.
  • 2 drop dough by 1/4-cupfuls 2 inches apart onto greased cookie sheets. bake for 11 to 16 minutes or until edges are lightly browned. let stand 2 minutes; remove from cookie sheets.
  • 3 tip: cookies will look underbaked in center but will continue to brown while cooling.
