Chipits Grasshopper Brownie Cupcakes

Ingredients
- 1 cup mint chocolate chips
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup flour
- 2 eggs
- 1 teaspoon baking powder
- 4 cups mini marshmallows
- 3/4 cup milk
- 1 1/2 teaspoons mint extract
- 1 dash green food coloring
- 1 1/2 cups whipping cream (whipped)
Recipe
- 1 melt 1 cup mint chocolate chips with 1/2 cup butter.
- 2 stir in sugar and flour, 2 eggs and baking powder. mix until smooth.
- 3 pour into 24 large cups.
- 4 bake at 350 for 15-18 minutes, or until cake tester has moist (not wet) crumbs on it. cool.
- 5 for icing, melt 4 cups mini marshmallows with the milk over low heat. remove, and stir in mint extract and food coloring.
- 6 chill until cool but not set (about 15 minutes).
- 7 fold mint mixture into whipped whipping cream.
- 8 top each cupcake with a spoonful of icing mixture. chill.
