Chipits Grasshopper Brownie Cupcakes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 cup mint chocolate chips
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 4 cups mini marshmallows
  • 3/4 cup milk
  • 1 1/2 teaspoons mint extract
  • 1 dash green food coloring
  • 1 1/2 cups whipping cream (whipped)

Recipe

  • 1 melt 1 cup mint chocolate chips with 1/2 cup butter.
  • 2 stir in sugar and flour, 2 eggs and baking powder. mix until smooth.
  • 3 pour into 24 large cups.
  • 4 bake at 350 for 15-18 minutes, or until cake tester has moist (not wet) crumbs on it. cool.
  • 5 for icing, melt 4 cups mini marshmallows with the milk over low heat. remove, and stir in mint extract and food coloring.
  • 6 chill until cool but not set (about 15 minutes).
  • 7 fold mint mixture into whipped whipping cream.
  • 8 top each cupcake with a spoonful of icing mixture. chill.
