Creme De Menthe Brownies

Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa
- 1/2 teaspoon baking powder
- 10 ounces mint chocolate chips
- 1/2 cup butter, melted
- 1/3 cup unsweetened cocoa
- 2 cups confectioners' sugar, sifted
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 15 peppermint patties, chopped
Recipe
- 1 preheat the oven to 350 degrees f.
- 2 grease a 9" x 13" x 2" pan.
- 3 using an electric mixer, combine the butter and sugar in a large mixing bowl.
- 4 beat at medium speed until creamy.
- 5 add the eggs, one at a time, beating well after each addition.
- 6 add the vanilla, mixing well.
- 7 in a separate bowl, combine the flour, cocoa and baking powder.
- 8 gradually stir into the butter mixture.
- 9 fold in the mint chips.
- 10 spoon into the greased pan and bake for 35 minutes.
- 11 while the brownies are baking, prepare the frosting.
- 12 combine the butter, cocoa, confectioners' sugar, vanilla and milk in a large mixing bowl.
- 13 beat at medium speed with an electric mixer until the dry ingredients are moistened.
- 14 beat at high speed until of spreading consistency.
- 15 remove the pan from the oven and allow the brownies to cool in the pan on a wire rack.
- 16 spread with the chocolate frosting.
- 17 top with the chopped mint patties.
