Creme De Menthe Brownies

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa
  • 1/2 teaspoon baking powder
  • 10 ounces mint chocolate chips
  • 1/2 cup butter, melted
  • 1/3 cup unsweetened cocoa
  • 2 cups confectioners' sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 15 peppermint patties, chopped

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 grease a 9" x 13" x 2" pan.
  • 3 using an electric mixer, combine the butter and sugar in a large mixing bowl.
  • 4 beat at medium speed until creamy.
  • 5 add the eggs, one at a time, beating well after each addition.
  • 6 add the vanilla, mixing well.
  • 7 in a separate bowl, combine the flour, cocoa and baking powder.
  • 8 gradually stir into the butter mixture.
  • 9 fold in the mint chips.
  • 10 spoon into the greased pan and bake for 35 minutes.
  • 11 while the brownies are baking, prepare the frosting.
  • 12 combine the butter, cocoa, confectioners' sugar, vanilla and milk in a large mixing bowl.
  • 13 beat at medium speed with an electric mixer until the dry ingredients are moistened.
  • 14 beat at high speed until of spreading consistency.
  • 15 remove the pan from the oven and allow the brownies to cool in the pan on a wire rack.
  • 16 spread with the chocolate frosting.
  • 17 top with the chopped mint patties.
