Chocolate Oranges

Ingredients

- 4 oranges
- 250 g dark chocolate, chopped
- 1/2 cup thickened cream
- 3 eggs, separated
- 1/4 cup caster sugar
- 1 tablespoon grand marnier
Recipe
- 1 cut oranges in halves, scoop out orange pulp.
- 2 melt chocolate over hot water, cool.
- 3 whip cream until soft peaks form.
- 4 beat egg yolks and sugar until light and pale in colour, about 5 minutes, add liqueur.
- 5 beat egg whites until soft peaks form.
- 6 fold chocolate into egg yolk mixture, then fold in egg whites and cream.
- 7 sit orange halves in patty pan, spoon chocolate mixture into oranges, cover, freeze until firm.
- 8 to serve, cut each orange half in half again.
