Family Fun Cheesecake

Ingredients

  • Servings: 6
  • 250 g digestive biscuits
  • 100 g butter
  • 250 g mascarpone cheese
  • 125 g natural yoghurt
  • 142 ml double cream
  • 2 tablespoons caster sugar
  • 1 lime
  • chocolate chips or grated chocolate
  • tinned mandarin orange

Recipe

  • 1 put the biscuits in a clean teatowel or plastic bag and bash to smitherines with a rolling pin.melt the butter and mix biscuit crumbs in with it then line a loose bottomed 8" flan tin with the mix.
  • 2 juice the lime
  • 3 beat the cream,cheese,yoghurt,sugar and lime juice until thick.
  • 4 spread this mix on the biscuit base and refridgerate.
  • 5 when set(4 hours will do it,overnight is better)decorate with fruit pieces and chocolate.push base of tin upwards,wash up ring and enjoy.
