Chocolate Mousse

Ingredients

  • Servings: 4
  • 50 g chocolate, with a cocoa content of over 75%
  • 2 eggs, separated
  • 25 g sugar

Recipe

  • 1 melt the chocolate while constantly stirring in a double boiler over simmering water. in a bowl beat the egg yolks with the sugar until you get a thick cream. carefully add while stirring the melted chocolate to the egg yolk-sugar mixture and cool it down while stirring over a pan of ice. beat the egg whites until they form stiff peaks. fold the beaten whites carefully into the cool yolks-sugar-chocolate mixture. using 4 serving dishes divide the mousse evenly between them, then place these in the refrigerator for at least 2-3 hours. serve with whipped cream.
