Fudgy Chocolate-oatmeal Bars

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 75
  • 1 cup butter
  • 2 cups of packed brown sugar
  • 2 eggs
  • 4 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups quick-cooking rolled oats
  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 cup sliced almonds

Recipe

  • 1 heat oven to 350°f.
  • 2 set aside 2 tbsp of butter.
  • 3 beat remaining butter in large bowl on medium speed of mixer for 30 seconds.
  • 4 add brown sugar and beat until combined.
  • 5 beat in eggs and 2 teaspoons of the vanilla.
  • 6 stir together flour and baking soda in another large bowl.
  • 7 stir in oats.
  • 8 gradually stir flour mixture into beaten mixture, set aside.
  • 9 combine remaining 2 tbsp of butter, sweetened condensed milk and chocolate chips in medium saucepan.
  • 10 cook over low heat until chocolate melts, stirring occasionally.
  • 11 remove from heat.
  • 12 stir in 3/4 cup of almonds and remaining vanilla.
  • 13 press 3 1/3 cups of oats mixture into bottom of an ungreased 15 1/2x10 1/2x1-inch jelly-roll pan.
  • 14 spread chocolate mixture over the oats mixture.
  • 15 using your fingers dot remaining oats mixture over the chocolate.
  • 16 sprinkle the remaining almonds.
  • 17 bake about 25 minutes or until top is lightly browned (chocolate mixture will still look moist)
  • 18 cool in pan on a wire rack.
  • 19 cut into 2x1-inch bars.
